Sweet Potato Hash Brown Patty

This low-in-fat hash brown is a good alternative to French fries.

This hash brown patty tastes great and takes only a few minutes to cook. Serve with applesauce. 

Ingredients

1 sweet potato
1 large egg, separated and yolk discarded
2 teaspoons olive or canola oil

Instructions

  1. Peel sweet potato, then coarsely grate over medium bowl. Add egg white and stir until thoroughly combined. Make four patties.
  2. Heat oil in large skillet over medium-high heat. Cook patties until golden brown and crispy, about 2 to 3 minutes per side.
